Directions

    1. Heat the olive oil in a large skillet over medium-high heat; cook and stir the onion in the hot oil for about 3 minutes.
  1. Add the poblano and cook for another 2 minutes.
  2. Add the garlic and cook until fragrant, about 30 seconds.
  3. Mix the zucchini and tomato into the skillet; cook together 5 minutes.
  4. Stir the corn kernels into the mixture.
  5. Season with salt and pepper and stir.
  6. Cover the skillet with a lid, reduce heat to medium-low and cook until the zucchini is tender, about 10 minutes.
